Rau muống ngâm chua giòn ngọt với những cọng rau muống được nhặt sạch lá, thái khúc ngắn ngâm cùng với giấm đường cùng các phụ liệu tạo nên nhiều màu sắc bắt mắt.
Rau muỗng nhặt sạch lá, ngắt khúc ngắn, rửa sạch. Tỏi bóc vỏ. Ớt bỏ cuống. Cà rốt và củ cải trắng gọt vỏ, thái nhỏ tủy thích. Cho vào nồi gồm: 240ml giấm gạo, 200g đường trắng và 1 muỗng canh muối, đun sôi rồi để nguội.
Xếp tất cả các nguyên liệu đã sơ chế vào trong 1 bình thủy tinh đã được làm sạch. Rót hỗn hợp giấm đường đã được làm nguội vào cho ngập hết rau muống, để yên 5 phút, đậy nắp lại rồi để nơi thoáng mát khoảng 2 ngày là có thể dùng.
